With a rich history in hospitality Colm O’Brien founded Carambola with a wealth of business experience already under his belt in 2003. The Carambola growth story since then is one of evolution from modest beginnings of 2 staff to now producing 120,000 lunches on a weekly basis in a state of the art production line that allows parents and guardians to make weekly decisions on day to day healthy lunch combinations for their kids
In late 2015, we were contracted to do an email migration project for Carambola. In a situation where loss of email would be catastrophic and with 62 email accounts running on Small Business Server 2008 internally, we took the opportunity to migrate them to the cloud onto the Microsoft office 365 platform. We ran with a cutover migration and with the assistance of Carambola’s IT & Logistics Manager, Marcin Ludzik the project was completed in a very short time frame.
From there, we went on to put our Rely IT Support Service in place. We have since improved the Dublin office wi-fi system, and installed a completely new Unifi Wi-fi system at the Limerick plant. We created extra server capacity also by adding RAM and creating a virtualised environment. We have also been supplying new PC screens on a phased basis. The near 100 strong team at Carambola consists of sourcing, production, delivery and sales.
